Last weeks MCC consisted of phat phajitas, with home made guacamole and this ‘ere salsa. This salsa is blindin’ and with the unexpected spoon of honey plonked in, it transfomed into a dish that can be used in a variety of ways; a dip, part of a salad, or a facial scrub.
Quick and easy salsa made with tomatoes from a tin. Tins? I love tins they’re useful for so many things, makeshift telephones, small fluffy animal containers and victorian lanterns.
- A tin of tomatoes
- A large Onion
- 1 medium green chilli
- The zest of 1 lime
- A teaspoon of honey
- Splash of Balsamic vinegar
- Small (maybe a child’s) handful of coriander
Tumble the opened tin of tomatoes into a bowl. Make it a bowl big enough for all the other bits. Chop up said tomatoes. Finely chop the large onion and add to the tomatoes.
Now de-seed and finely chop the green chilli and chuck that in too. At this point, you may want to give those hands a thorough wash, or at least make sure you don’t rub your eyes or go to the toilet.
Add the zest of the lime and 1 seconds worth of balsamic vinegar. The best way is to stick your thumb over the top of the bottle then tip in the vinegar, letting it dribble over your digit. Then mix in a teaspoon of honey.
Chop the small handful of coriander and incorporate to the salsa and finally season to taste but, be careful with the salt. Don’t forget to taste it.
